胡大刚,1986年出生,bat365正版唯一官网副院长,教授,博士生导师,石河子大学兼职博导,“国家优秀青年基金”和“山东省优秀青年基金”获得者,“山东青年创新榜样”,中国园艺学会理事兼苹果分会副会长,山东农业大学欧美同学会副会长,Horticulture Plant Journal、Seed Biology、园艺学报和河北农业大学学报编委,Food Quality and Safety和Journal of Integrative Agriculture(JIA)青年编委,Frontiers in Plant Science审稿编辑。2019年4月至2020年9月在美国康奈尔大学从事博士后研究;现被聘为“山东省现代设施果树技术创新中心外聘专家” 、共青团乡村振兴青年专家、“重庆市三江人才”和“泰安市岱宗人才工程行业拔尖人才”;“全国大学生创新创业大赛” 、山东省优秀博士论文和“山东省研究生优秀成果奖”优秀指导教师;主持国家自然基金面上项目等国家及省部级课题10余项;以第一完成人获齐鲁农业科技奖二等奖1项;近5年发表学术论著70余篇,2篇论文被Web of Science定义为前1%高被引论文。参编教材5部,申请或授权发明专利6项,登记团体标准1项。

研究方向简介:
以苹果为试材,针对苹果果实品质形成和保持的机理与调控开展理论基础和技术应用研究,进行基因遗传改良和生物育种等工作,具体包括:
1、苹果果实品质的形成与调控。从苹果果实的糖酸代谢和运输入手,研究了它们的合成、运输和液泡贮存;然后,从糖酸积累相关基因的环境和内部信号响应切入,揭示了适度胁迫等促进糖酸积累、改善果实品质的机理;基于此,运用传统杂交技术和基因编辑技术创制苹果新种质,并研发苹果果实品质提升栽培技术。
2、苹果果实品质保持的机理与调控。研究采后苹果果实失水、果肉软化和风味保持的调控机理,并研发配套的苹果果实保鲜新技术;同时揭示采后苹果果实病害发生的分子机理,寻求降低采后果实病害的调控措施,最终减少采后苹果果实的腐烂率;同时基于理论研究通过传统杂交育种选育优质耐贮及加工型新品种,同时利用基因编辑等技术创制优质耐贮新种质。
3、果品与营养健康。针对我国果品功能性产品欠缺等问题,开展营养成分的合成代谢、生物活性及作用机理研究,挖掘园艺产品中功能性成分,开发抗氧化、降血糖等满足不同群体需求的新产品,实现园艺作物的高值化利用。
